Instructor course program
COURSE ORGANIZATION:
The course will take place at the headquarters of the Confartigianato of Crotone P.zza Umberto 1 on 22, 23, 24 June.
Professional pizza makers with a minimum of 5 years of demonstrable experience and still working in a pizzeria can participate in the course.
Participants can arrive from any part of Italy.
The teacher who will direct the course is the Mr. Giuseppe Guarnaccia, pizza chef and baker expert in alternative flours, leavenings and doughs, Pizzaitalianacademy instructor.
The minimum number of participants is 10 max 25.
Each participant who passes the exam will become an instructor for Pizzaitalianacademy and will be able to take courses for our Academy in his pizzeria, issuing our diplomas according to our Know How.
The course has a duration of 8 hours a day divided between morning and afternoon.
Each participant who passes the exam will be issued a Master Pizzaiolo diploma both in Italian and in English, both certified ISO9001 and also recognized by Local confectionery.
Students will be provided with our operating manual.
If a participant does not pass the exam, he can repeat it on a date to be agreed with the Confartigianato and the master instructor within 3 months.

FIRST DAY:
- Classification of flours
- How to read a technical sheet of a flour
- Glucids, Lipids and Proteins
- Enzymes
- Fermentation
- Leavening
- Maturation
- Physical, chemical and biological leavening. Direct, indirect and semi-direct doughs
- DOUGH PREPARATION to be used on the last day
SECOND DAY:
- Use of salt, yeast and oil
- What is the ph
- Calculation of the ingredients of a dough
- Calculations for the water temperature on direct meals and biga
- Mother yeast
- The right cooking
- How to make a long leavening dough
- How to make a honeycomb dough
- Gluten-free pizza: dough and rules to follow
- The health and hygiene rules to keep in the pizzeria
THIRD DAY:
Practical test: On the last day, each participant will have to prepare the pizza with the dough made on the first day and present it to the master.
