What is gluten intolerance?

Gluten is a protein found in some grains, such as wheat, spelt, barley and rye. Gluten intolerance, also known as celiac disease, is an autoimmune disease in which the immune system reacts abnormally to the consumption of gluten, causing inflammation in the body.
In people with intolerance, eating foods containing gluten causes an immune response that damages the lining of the small intestine. This damage prevents proper absorption of nutrients and can cause gastrointestinal symptoms such as abdominal pain, diarrhea, bloating and weight loss.
In some subjects, gluten intolerance could trigger different symptoms such as: tiredness, anemia, skin rashes, depression and irritability.
At this point it is well understood how important it is for a pizzeria to put a pizza made with low gluten flour on the menu in order to be able to intercept a target of customers who until recently could not consume a traditional pizza even if they wanted to.
